More Balboa PTA Recipes From the '60s
Brunswick Stew
- 3 lbs. chicken
- 3 qts. water
- 1 large onion (sliced)
- 1/2 lb. lean ham (diced)
- 3 pts. tomatoes
- 1 pt. lima beans
- 4 large potatoes (diced)
- 1 pt. corn
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1 pod red pepper (small)
- 3 oz. butter
Cut up chicken and put in large pan with water. Add onion, ham and simmer gently 2 hours. Add tomatoes, lima beans, potatoes, corn, salt, and peppers. Cover. Simmer 1 hour, stirring often. Add butter and serve hot.
