Chicken Almond Rice
- 2 lbs. bulk sausage
- 1 bell pepper (diced)
- 1 small stalk celery (diced)
- 2 onions (diced)
- 1/2 lb. blanched almonds
- 3 pkgs. Lipton's Noodle Soup Mix (cooked in 9 cups water)
- 2 cups uncooked rice
Brown sausage (pour off grease). Add pepper, onion, celery and cook until golden brown. Add to soup. Stir in rice and almonds. Bake 1 hour in 350F oven. Stir 2 or 3 times. Use large greased roaster. Mixture is thin before baking. Chicken may be substituted for sausage. Serves 12 to 15.
