Cut pineapple in half, lengthwise. Scoop out pineapple and cut into chunks. Save one half of pineapple shell to use as a bowl for dressing. Combine fruits and arrange on a lettuce lined platter. Place pineapple shell on corner or side of platter.
Dressing:
Mix dry ingredients. Add onion. Add oil, a small amount at a time alternating with vinegar, last addition vinegar. Beat with a fork or rotary or electric beater until blended. Pour into pineapple shell made with salad.
