More Balboa PTA Recipes From the '60s
Hot Chicken Salad
- 4 cups cooked chicken (cut up)
- 2 cups celery (chopped)
- 2 Tbsp. lemon juice
- 4 hard cooked eggs
- 2/3 cup almonds (chopped)
- 2 pimentos (chopped fine)
- 1 cup cheese (grated)
- 1 tsp. salt
- 1½ cup mayonnaise
- 1/2 tsp. monosodium glutamate
- 1 Tbsp. onion (minced)
- 1½ cups potato chips (crushed)
Combine all ingredients except cheese and potato chips. Let stand to blend. Top with cheese and chips. Bake in 350°F oven for 45 minutes. Serves 8 - 10.
