More Balboa PTA Recipes From the '60s
Tamale Pie
- 3 Tbsp. fat
- 1/4 cup onion (chopped)
- 1/4 cup green pepper (chopped)
- 1 lb. ground round
- 1 large can whole kernel corn
- 2/3 cup yellow corn meal
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. cumin
- 1 can pitted ripe olives
- 1 can tomatoes (#2½ can)
Brown green pepper and onion, then ground round in fat. Add other ingredients and mix well. Pour into 2½ qt. casserole leaving an inch at the top. Bake at 350°F for 1 hour. Serves 8 generously.
