More Balboa PTA Recipes From the '60s
Turkey Squares
- 4 Tbsp. butter or margarine
- 1/2 cup onion (minced)
- 1-1/2 cups celery (chopped)
- 2 cups turkey stock (or 1 can cream of chicken soup diluted with 1 can water)
- 3 cups chicken or turkey (cut in pieces)
- 3 cups cooked white or brown rice (or 1 cup raw rice)
- 3 Tbsp. parsley (chopped)
- 1/4 tsp. nutmeg
- Salt and pepper
- 4 Tbsp. flour
- 2 eggs (beaten)
Cook onions and celery slowly in butter until slightly brown. Add flour, then stock, meat, rice, parsley, eggs, nutmeg, salt and pepper. Bake at 350F for 1 hour in 7-inch x 11-inch greased pan.
