Pumpkin Surprise

Another great recipe from the kitchen of Jen's mom, Flo.

CRUST:

• 1 box yellow cake mix (reserve 1 C for topping)
• 1/2 C (1 stick) butter, melted
• 1 egg, slighly beaten

FILLING:

• 2 C pumpkin
• 1/2 C brown sugar
• 2 eggs
• 2-1/2 tsp pumpkin pie spice
• 2/3 C milk

TOPPING:

• 1/4 C granulated sugar
• 1 C reserved cake mix
• 1 tsp cinnamon
• 1/4 C butter, melted

Mix crust ingredients and press into 9x13-inch pan. Mix filling and spread on top of crust. Mix topping and spread on top of filling.

Bake at 350F for 40-50 minutes or until knife inserted in center comes out clean.
