The original source of this recipe is unknown. These are great as an appetizer, any-time snack, or part of a breakfast, brunch or buffet. They can be prepared ahead and frozen uncooked, then baked whenever they're needed needed. They're best served hot but are still pretty tasty after they've cooled.
Preheat oven to 375F.
Combine uncooked sausage and cheese; add biscuit mix and mix thoroughly. (This is easiest to do with your hands.)
Shape into 1-inch balls and place about 1-1/2 inches apart on ungreased baking sheets.
Bake for 20 minutes or until browned. Drain on paper towels. Serve warm.
TO FREEZE: Freeze unbaked sausage balls in single layer on baking sheets. When frozen, remove from pans and store in zip-lock freezer bags or other freezer container. Thaw 15 to 20 minutes at room temperature, then bake as above.
