Sugar and Spice Nuts

This is a great snack to serve as an appetizer, or on the dessert table. From the book Perfect Parties (the recipe in the book is called Sugar and Spice Almonds).

Preheat oven to 225F. In a medium bowl, beat egg white until foamy. Stir in sugar, cinnamon, and almonds, coating almonds well; spread on a greased jellyroll pan. Bake 1 hour, stirring every 15 minutes. Cool completely. Store in an airtight container. Makes about 4-1/4 cups almonds.

NOTE: You can use 1 lb. any kind of nuts -- walnuts, pecans, almonds, etc.
