Preheat oven to 350 degrees. Grease a 1 quart casserole dish. Saute onions and celery in 1 Tbsp. butter until clear. In a bowl, combine all remaining ingredients, then pour in the sauteed vegetables. For additional richness, add the cream. Use enough bread crumbs or stuffing mix to thicken the mixture. The amount will vary depending on the liquid in the corn and whether you add the cream. Pour into casserole dish and bake for 40 minutes or until browned on top and sides are bubbling a bit.
