Walnut & Wild Rice Chicken Salad
This recipe was in a full-page magazine ad for Diamond Walnuts.
- 1 cup white and wild rice blend
- 1/2 cup sliced green onion
- 1/4 tsp. grated lemon peel
- 1-1/2 Tbsp. lemon juice
- 2/3 cup plain yogurt
- 3 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 cups shredded cooked chicken
- 1 cup chopped Diamond Walnuts
Cook rice according to package directions. Cool. In a large bowl, combine yogurt, green onion, olive oil, lemon peel, salt, lemon juice, and pepper. Stir in rice, chicken and walnuts. Refrigerate until serving. Makes 6 servings.
